Our client, Grays & Feather, operates a group of successful wine-led concepts across London, and brings together a talented team to deliver highly experiential, quality concepts from an extraordinary food truck to opulent wine bars. Quill is the latest addition to the flock and brings together all their influences and passions in a Victorian arched-brick vault within Borough Yards, with a riverside setting in this deeply historic district of London.

A building and its interior spaces dictate the outcome of the ambience and customer experience, from first impressions of the exterior to that threshold moment and sense of arrival, so we knew we needed to find something special, but special is rare, and in high demand in one of London’s best loved ‘foodie’ destinations. An inspiring agents’ deck was created and issued to the London agents and targeted estates and landlords.

Off-market, we found a space that had been recently vacated by a craft beer tap-room, opened by a local micro-brewery; getting in quick was essential, as within a matter of days our client was in a competitive bidding scenario, but with our guidance on presenting the concept to the landlord and their agent, Grays & Feather were selected as the preferred operator, who delivered their concept true to their vision, brought to life through the talented design and delivery of Studio Bare, a luminary Hospitality Design Studio based in London.
